Someone asked me, ‘what’s the 1 thing that I was most shocked to learn about food?’ For me it was: The power of removal. When you've been eating a bunch of different stuff in excess, like I once was, you don't know how negatively (or positively) they are affecting you until you take them out for a period of time, in a controlled manner, and then put them back in one by one. This opened my eyes to how poorly I was eating, a long time ago. It’s still a process I use today when I can’t figure out why my stomach is upset or why I’ve gained a few pounds unintentionally.
