A long time ago, I think it was about 20 years, my wife and I were eating at a Mexican restaurant, having guacamole prepared table side. It was one of the first times I ever noticed the server was wearing gloves, and when I asked him why, he said ‘because he had done this so many times and he was just sick of getting the avocado on his hands.’ Almost every time I’ve ever cut open an avocado at home since then, which is a lot of times, I am reminded of that moment. It wasn’t earth shattering information but for some reason, that just stuck with me and got stuck to every avocado I’ll ever eat.
